If we don’t provide a reliving letter, what happens in the new organisation? Is there any alternative to that?

When you join with an new employer office you will be expected to submit experience certificate and relieving letter issued by the ex-employer. This is the usual process followed by many employers. If you don't provide mostly they won't allow you to join. However there might be some exceptions and some employers might allow you to join after checking payslips.
