We are mfg.Industrial engineering product; One of my sales employee has achieved sales target of 4.78 cr. against target of 4 cr last year, we paid him Incentive on additional target done; so now for this year how to set his target, salary & incentive?

according to me .. you should set everything as shown in two categories below :
If,
Sales Target achieved - 5.5 crores
Incentives - Same as usual
If,
Sales Target achieved - 6+ crores
Incentives - Earlier incentives + 0.25% more incentive
