Dear Varsha,

You can display the amount of food wasted and also equated the food wasted that can be actually consumed by other employees. The display must translate the food wasted in terms of money equivalent. Ensure that the Welfare committee prepares a barchart containing information of

a. Food wasted translated into number of employees who can actually consume the food had it not been wasted.

b. The monetary equivalent of the food wasted.

If you operate in shifts do it on a three shift basis and the compare the number of employees in each shift Vs food wasted and display, this gives information of the amount of food wasted per person per shift.

Continue to do it shift after shift everyday and I am sure you will definitely find improvement in the attitude.

You can also use Fixed Point Photographs that displays the food wasted in the previous shift. Swarming of flies on wasted food and the possible health hazards owing to this can also be furnished.

Anything that is Visual and fact based will bring about lot of improvement. Have Welfare committee members in each shift and ask them to present the data on the canteen notice board. You will observe a sea change in a month's time.

First, if you are giving unlimited food then stop it (portion the food items per plate), if they want extra they can buy more.
Secondly if they eat too much then they will not be able to work. Will go to sleep or will become lazy.
Portion control is the best way you can control wastage. Also then it will help in production forecast.
I have worked in big canteens for almost 25 years.
What ever suggestions are given by others are also good and slowly implement them and make posters of real photographs were human beings are fighting for food daily. Looking at photos there conscious will warn them.

I appreciate suggestion of Gautam, and now fixed quantity disposable plates are also available that can be of help. Pre-filled plates can be served to workers and they can take second serving as per their requirement and will not be able to dump their plate and wastage can be minimized,
