What is an organisation supposed to do in case an employee offers a spot resignation? Should the employee be gives Experience Letter or one month salary? Kindly help me out here as in our organisation, we don't give any of it.

What does your company state on this? Because when a stipulated notice period is there,it has to be served in the interest of both employee and employer.
If you are clear in the policy (not to give till notice period is served), then implement it.
