Can anybody help me with some variable pay structure of support staff of hotel industry ?

First of all you have to explain what do you mean by variable pay structure?
Compensation or Remuneration consist of fixed pay or allowances and variable allowances.
For example:
Basic salary is permanent price of job which cannot be reduced because its market price.
Fixed Allowances:- HRA, Transportation, Education, Medical,
Variable Allowances: Shift, Hazardous, Overtime Allowances, Incentives, Commission, Bonus etc.
